A refined California Wine Dinner Solaire sets a new standard for diners

Finestra at Solaire Resort Entertainment City brings a focused culinary experience through a California Wine Dinner on November 27 at 6 PM. The dinner highlights select wines from Napa Valley, Mendocino, and Los Carneros. Each pour brings clean flavors and clear regional identity. Guests enjoy a structured meal that blends Italian technique with California character.

Chef Andrea Spagoni leads the menu. He guides diners through six courses that balance texture, flavor, and premium wine pairings. The evening starts with Rockefeller Oysters. The dish comes with Chenin Blanc Norgard Vineyard 2020 from Napa Mendocino. The pairing sets a crisp tone.

A Boston Lobster Cake follows. The chili mayo adds heat. The Chardonnay Private Reserve 2022 from Beringer, Napa Valley, gives a bright contrast. The third course features Roasted Duck Breast with squash and a ginger honey glaze. The Pinot Noir Heritage 2021 from Black Stallion Estate supports the dish with clean structure and smooth finish.

The Patagonian Toothfish brings deeper flavor. The chicken liver glaze and dried apricot sharpen the dish. Cabernet Franc Ophelia 2021 matches the weight and taste. The U.S. Prime Tenderloin with baked Idaho potato brings a strong centerpiece. Cambium 2016 from Sequoia Grove pairs with the course.

The finale features a Dark Chocolate Pie with cherries, caramel walnut, and Napa ice cream. Bucephalus Red Wine 2019 from Black Stallion Estate completes the night with a bold finish.
