Experience Michelin-starred Chef Zor Tan’s Culinary Artistry at Red Lantern, Solaire Manila
Solaire Resort Entertainment City welcomes Singapore’s Michelin-starred Chef Zor Tan for a rare three-night culinary showcase at Red Lantern from November 14 to 16 at 6:30 PM. Known for his artistry and innovation, Chef Tan brings his “Circle of Life” philosophy to Manila through an 8-course dinner that celebrates heritage, creativity, and emotion.

Chef Tan is the visionary behind Singapore’s restaurant Born, ranked No. 25 in Asia’s 50 Best Restaurants 2024. His cuisine blends the precision of fine dining with heartfelt storytelling, drawing from Hokkien roots and influences from Cantonese, Sichuan, and Taiwanese traditions. Each dish represents a chapter of his life, from his childhood memories to his travels and professional milestones.
The menu opens with Kanpachi paired with ginger and watermelon radish, followed by a signature bao filled with Wagyu and oyster, inspired by his mother and his experiences in Spain. A comforting chestnut velouté with black garlic and macadamia follows, showcasing Chef Tan’s love for chestnuts.
For the seafood course, he introduces abalone with chicken fat and Yunnan jade fungus, replacing the usual monkfish. The King Crab with fish maw is a tribute to Filipino flavors, elevated with Talangka rice crafted exclusively for Solaire. The main course features A5 Wagyu paired with Soubise and Maitake mushrooms.
To close the experience, Chef Tan serves two desserts: Bird Nest with grape and elderflower syrup, and his signature sweet potato puree with sea salt ice cream, oolong Chantilly, and snow salt.
