Michelin Star Chef Zor Tan Lights Up Red Lantern at Solaire

Chef Zor Tan Solaire Dinner brings heritage and modern flavor

Solaire Resort Entertainment City sets the stage for an uncommon dining moment as Red Lantern welcomes Michelin starred Chef Zor Tan for a three night dinner event from November 14 to 16. The Singapore based chef leads Born, ranked No. 25 in Asia’s 50 Best Restaurants 2024. He brings an 8 course menu shaped by his Hokkien background and the influence of Cantonese, Sichuan, and Taiwanese cooking.

Guests stepped into Red Lantern’s warm space and found a dining room ready for detail driven cuisine. The restaurant’s refined service and quiet rhythm matched Chef Tan’s focus on discipline and flavor. The menu told a clear story through memory and technique. The first course, kanpachi with ginger and watermelon radish, honored the raw fish toss served during Chinese New Year. The flavors stayed sharp and direct.

A crisp bao with wagyu and oyster followed. The dish reinterpreted the traditional Haobing oystercake with touches from his time in Spain. The chestnut velouté in the third course blended chestnut, black garlic, and macadamia. The plate held clean warmth.

The abalone course delivered richness with control. Chef Tan paired the abalone with chicken fat and jade fungus from Yunnan. The next dish, king crab with fish maw, carried a Filipino touch through the use of Talangka rice. He created this dish exclusively for Solaire. The A5 wagyu course balanced soubise and maitake with the beef as the steady center.

Two desserts closed the night. The first used bird’s nest with grape and elderflower. The second delivered his signature sweet potato with sea salt ice cream, crisp sweet potato, oolong Chantilly, and snow salt. Each course stayed aligned with his “Circle of Life” philosophy, where dishes reflect memories, milestones, and experiences that shaped his craft.

Non alcoholic pairings supported the flow. Guests left with a sense of clarity. The dinner showed how strong technique and personal history form a complete dining experience.
