Ito Ranch Matsusaka Beef Philippines debuts for local diners
Prime Cuts by Doubleday has brought Ito Ranch Matsusaka Beef to the Philippines. This marks the first time Manila diners can order one of Japan’s rarest wagyu varieties. The reveal took place at Shangri-La Plaza’s Grand Atrium with chefs, hoteliers, restaurateurs, press, and government guests in attendance.

Matsusaka is called the Queen of Wagyu for a reason. The beef shows intricate marbling and a low melting point near 12°C. The result is a soft, buttery bite that dissolves on the tongue. Shipments rarely leave Japan. Its arrival signals confidence in the local dining scene and in Prime Cuts as a trusted gateway for luxury ingredients.
Hiroki Ito, third-generation head of Ito Ranch in Mie Prefecture, stressed tradition and care. He said the launch shares decades of patient cattle-raising with a market that values authenticity. Ito Ranch began in 1953 and has over 35 competition wins. The farm achieved a three-year Grand Champion streak from 2017 to 2019 at the Matsusaka Beef Carcass Competition. Ferran Adrià has praised the beef. Business Insider has featured the ranch’s meticulous practices.
Doubleday CEO Lorenzo Vega framed the partnership as a standard-setter. Prime Cuts, the group’s specialty division, has built a following for rare A5 Wagyu and fine foods. The event featured a dramatic slab presentation and a Kagami Biraki sake toast for harmony and prosperity. Guests tasted dishes prepared by Teppanya and Sicilian Roast, event collaborators and early restaurant partners.
Supporters included Maison Midori Matcha, My Shopping Box, and Ralph’s Wines & Spirits. Initial availability begins at Teppanya and Sicilian Roast. More partner restaurants will follow. Businesses and chefs can inquire through Prime Cuts by Doubleday for verified sourcing.
