La Terrazza Michelin Star Rome marks a new chapter for Hotel Eden
La Terrazza at Dorchester Collection’s Hotel Eden in Rome now holds a Michelin star. The award strengthens the restaurant’s place among Italy’s respected dining spots. It also highlights the leadership of executive chef Salvatore Bianco and general manager Mirko Cattini. Guests visit for the food, the service, and the panoramic view of Rome from the top floor of the hotel.

The recognition arrived 18 months after Bianco joined Hotel Eden. His presence reshaped the kitchen and the overall dining direction. He grew up in Torre del Greco in Naples and built his roots early. His meeting with Gualtiero Marchesi shaped his path. He later served as Marchesi’s sous chef in Rome. He returned to Naples and spent more than ten years leading Il Comandante. The restaurant gained and held a Michelin star starting 2012 under his leadership.
Bianco draws from his childhood spent around sculpture and painting. He describes cuisine as a form of art that reaches all senses. He follows a guiding principle that blends past influence with new ideas. He honors Italian memory and regional flavor without ignoring global influence. His cooking style carries a Mediterranean identity shaped by precise sourcing. He allows ingredients to tell stories that reflect landscapes and memory. His tasting menus highlight that viewpoint. His signature dishes include spaghetti with acorns, roasted coffee, Kentucky tobacco and barley. He also serves pigeon with persimmon kimchi, pepper, kombucha and chestnuts. His cuttlefish with sea vignarola stays loyal to his approach.
Bianco says the Michelin star brings joy. He sees it as recognition of effort, teamwork and persistence. He says today’s guests want honest flavor and meaningful culinary journeys. He credits his team and welcomes the award as motivation.
Cattini says the Michelin star reflects the skill, creativity and service of the group. He says the award signals a strong commitment to quality and to the Roman setting of the hotel. Bianco also shapes the culinary direction of Il Giardino Ristorante. He brings refined Mediterranean dishes with local influence to the hotel’s broader food program.
